Crockpot Carnivore: Ground Beef for People Who Can’t Be Bothered

The carnivore diet’s least talked-about advantage is how lazy it can be. There is no vegetable to chop, nothing to turn to mush, and beef only gets better the longer you leave it alone. A slow cooker (a crockpot, if you are American) suits this way of eating better than almost any other, because the one thing it does badly, murdering vegetables into grey sludge, is a thing you no longer have to care about. Load it in the morning, ignore it all day, eat like a king at six.

This is the hands-off end of our carnivore ground beef recipes: one pot, almost no effort, a week of lunches out the other side.

Why a slow cooker suits carnivore

Long, low heat is what turns cheap, fatty, connective cuts into something tender, and it renders fat slowly into a rich base instead of splitting it out. For a diet built on fatty beef that is exactly what you want. There is no timing to get wrong and no delicate ingredient to overcook. It is the most forgiving way there is to cook mince.

Do you brown ground beef before slow cooking?

Yes, and it is the one step you must not skip. Raw mince tipped straight into a slow cooker steams in its own liquid and comes out grey, pebbly and boiled-tasting. Five minutes of hard browning in a hot pan first builds the seared, savoury flavour that carries the whole dish, then everything goes in the pot together. Brown first, and the rest takes care of itself.

The fat-pooling problem, and how to handle it

Slow-cooked fatty mince will render a layer of fat on top. That fat is flavour and calories you want, so the usual move is simply to stir it back through before serving. If it is genuinely more than you can eat, skim a little off, but most people on this diet want all of it, especially if they are training. It is not a fault to fix, it is the point.

Prep Time 15 minutes
Cook Time 5 hours
Total Time 5 hours 15 minutes
Servings 6 servings

Ingredients

  • 1 kg 20% Ground Beef
  • 500 ml Beef Bone Broth
  • 50 grams Tallow or beef dripping
  • 2 tsp Salt
  • 200 grams Grated Cheese optional, to finish

Instructions

  • Brown the mince hard in a hot pan first, in batches, so it colours instead of greying. Do not skip this or you get grey, boiled-tasting beef.
  • Tip the browned beef into the slow cooker (crockpot) with the bone broth, tallow and salt, and scrape in any browned bits from the pan.
  • Cook on low for four to six hours. The mince will drink the broth and the fat will render into a rich base.
  • If the fat pools on top, stir it back through before serving, or skim a little off if it is more than you want.
  • Stir in grated cheese at the end if you like, and serve. Portions keep for four or five days in the fridge and freeze for a month.

How long can carnivore mince sit on warm?

Once it is fully cooked, a slow cooker on its warm setting will hold beef safely for a couple of hours, which covers the gap between getting home and actually wanting to eat. Beyond that, get it into the fridge rather than leaving it on warm all evening. It keeps for four or five days cold and freezes in portions for a month.

Batch-cooking a week in one pot

Double the recipe and you have cooked most of a week in a single lazy afternoon. The same pot of slow-cooked mince becomes lunches straight from the fridge, a filling for the meatza, or the base of a fast chilli if you brown off some extra chuck to add. One session of near-zero effort, several days of not having to think about food.

Does slow-cooked beef have any Fiber?

No, and it does not need it. If that gives you pause, it is dealt with properly in why you don’t need vegetables to be healthy. This is beef, fat, salt and broth, slow-cooked into something rich. There was never a vegetable in it to miss.
