Why ground beef beats eggs alone for breakfast
Eggs on their own are a light breakfast, and a lot of people on carnivore quietly undereat in the morning because of it, then wonder why they are ravenous by lunch. Adding a portion of fatty mince turns a snack into a proper meal: more protein, more fat, more staying power. The beef is what makes beef-and-eggs hold you for hours instead of an hour.
The one-pan beef and egg scramble
The whole thing happens in one pan in about ten minutes. Brown the mince in butter first so it has real colour and flavour, then turn the heat right down before the eggs go in. The single mistake to avoid is scrambling the eggs to gravel on high heat. Fold them gently off the direct heat so they stay soft and just set, glossy rather than dry. That is the difference between a good breakfast and a sad one.
Carnivore Beef and Egg Breakfast Scramble
Ingredients
- 250 grams 20% Ground Beef
- 3 Eggs
- 30 grams Butter
- 1 tsp Salt
- 40 grams Grated Cheese optional
Instructions
- Brown the mince in the butter in a hot pan, breaking it small only once it has real colour. Salt it.
- Turn the heat right down. Beat the eggs and pour them over the beef.
- Fold gently, off the direct heat if you need to, so the eggs stay soft and just set rather than scrambled to gravel.
- Stir in the grated cheese if using, and eat straight away. This keeps you full for hours in a way toast never did.
A breakfast casserole you can bake on Sunday
If you would rather not cook at seven in the morning, make the scramble into a bake. Brown a big batch of mince, beat it with a dozen eggs and plenty of cheese, pour it into a dish and bake at 180C/350F until set. Cut it into squares and you have grab-and-go breakfast for the week, in the same vein as the cheeseburger casserole but built for the morning. Cold or reheated, it holds up all week.
Beef breakfast without eggs
Plenty of people do not get on with eggs every day. If that is you, breakfast can simply be a browned patty of seasoned mince with a lump of cheese melted on top, or last night’s meatballs reheated. There is no law that breakfast has to involve eggs at all. Meat in the morning is the only rule that matters here.
How much protein a beef breakfast actually gives you
A modest 250g of mince and three eggs puts you comfortably over forty grams of protein before you have properly woken up, which is a serious head start on a day’s target, especially if you train. Front-loading protein like this is one of the quiet reasons a carnivore breakfast keeps hunger flat until the afternoon.
