Carnivore Tacos: The Filling Was Always the Point

Nobody ever loved the tortilla. It was a delivery system, a way to get the good stuff from the plate to your mouth without a fork, and the good stuff was always the seasoned beef and the cheese. Carnivore tacos keep the part everyone actually wanted and quietly delete the carbs, by making the shell out of the cheese itself. Taco night, with the tortilla and the packet of mystery powder both retired.

It is one of the more fun of our carnivore ground beef recipes, and a good one for feeding people who think this diet is all plain steak.

What is actually in taco seasoning

Turn the sachet over and read it. Most shop taco seasoning is cornflour and sugar first, doing the thickening and the moreish sweetness, with a bit of actual spice further down the list. You have been seasoning your beef with dessert and gravy granules. Properly browned mince with salt, and a pinch of cumin and paprika if you allow yourself a little spice, tastes more of beef than anything that ever came out of a packet.

How to season carnivore taco meat

Brown the mince hard in its own fat and do not drain it. The colour is the flavour, so let it actually sear before you break it up and stir. Salt at the end, not the start. If you eat a little spice, a teaspoon each of cumin and paprika stirred in at the finish gives you the taco identity without the fillers. If you are strict, salt and a good hard sear get you most of the way there on their own.

The cheese taco shell that actually holds

Pile small rounds of grated cheddar on a lined tray, well spaced, and bake until the edges are golden and the middle is set but still floppy. The trick is to catch them at the pliable stage, not brittle. While they are still warm and bendy, drape each one over a wooden spoon handle or the rungs of an upturned cooling rack and let it set into a taco shell as it cools. A brittle, overbaked round shatters; a pliable one folds and holds.

Ingredients
  

  • 500 grams 20% Ground Beef
  • 150 grams Grated Cheddar for the shells
  • 1 tsp Salt
  • 1 tsp Cumin optional, if you eat a little spice
  • 1 tsp Paprika optional, if you eat a little spice
  • Soured cream and extra grated cheese to serve

Instructions
 

  • Make the shells first: pile small rounds of grated cheddar on a lined tray, well spaced, and bake at 200C/400F for six to eight minutes until the edges are golden and the middle is set but still floppy.
  • While each round is still warm and bendy, drape it over a wooden spoon handle or the rungs of an upturned rack so it sets into a taco shell shape as it cools.
  • Brown the mince hard in a dry pan in its own fat, breaking it small only once it has real colour. Do not drain the fat.
  • Salt at the end, and stir in the cumin and paprika now if you are using them.
  • Spoon the taco meat into the cheese shells, top with soured cream and more grated cheese, and eat straight away before the shells soften.

The right fat ratio for taco meat

Use 80/20 here, not lean. The rendered fat is what carries the salt and spice through the meat and keeps it from going dry and pebbly in the shell. Lean mince in a cheese shell is a sad, dry thing. Fatty mince and melting cheese are made for each other.

Building a carnivore taco night

Make a big batch of the shells and the taco meat and let people build their own, topped with soured cream and more grated cheese. It is a genuinely social meal that happens to be carnivore, which is a rare and useful thing. Any leftover taco meat is not wasted either: it goes into a scramble the next morning, or on top of the meatza for dinner.

Do carnivore tacos have any Fiber?

No, and the tortilla was the only thing bringing any, which tells you how little it was doing. The full case is in why you don’t need vegetables to be healthy. Beef and cheese is a complete meal. The shell here is just more of the good part.
