Eat 0.8 grams of protein per pound of the bodyweight you want. Not the weight you stood on the scale with this morning, and not the 1.6 to 2.2 grams per kilo that every calculator on the internet will hand you inside four clicks.
For most people that lands lower than the number they have been told to chase, and the reason has nothing to do with being timid about meat. It is the anchor. Every mainstream protein rule multiplies your current bodyweight, which means the more fat you are carrying, the more protein it instructs you to eat. That is a strange piece of arithmetic when you say it out loud. Fat tissue does not ask for amino acids. It sits there.
So the target gets pegged to the body you are building rather than the one you are currently hauling about. Once it is set, it stops moving. You lose two stone and the number stays exactly where it was, because the muscle you are defending has not gone anywhere.

Carnivore is not a high-protein diet, and treating it as one is where people go wrong
Meat equals protein is the most expensive misunderstanding in this way of eating.
Look at what is actually on the plate. A hundred grams of ordinary 20% mince carries 17 grams of protein and 20 grams of fat. That is 68 calories of protein against 180 calories of fat. Seven in every ten calories arrive as fat, and that plate is not an outlier. That plate is the diet.
Carnivore is a high-fat diet with adequate protein attached. It is not a protein diet that tolerates some fat as an awkward passenger. Get it backwards and the consequences turn up fast. You reach for the leaner mince because it reads as more of the good stuff per pound. You spend twenty per cent more for twenty per cent less fuel. Then you are ratty by four in the afternoon, hungry by seven, and reasonably certain the diet is broken.
The fat is not a concession you make in order to eat the meat. The fat is the point of the meat. That argument is made in full at why lean protein on its own is not carnivore.
The number: 0.8 grams per pound of the bodyweight you want
Zero point eight grams of protein per pound of ideal bodyweight. In metric, 1.76 grams per kilo of ideal bodyweight. Every day, training or not.
Ideal bodyweight means the weight you would carry lean and strong. Not your best ever weight, not a number off a chart, and not what you weighed at twenty-two. If you have carried a leaner physique before and know roughly what the scale said, use that. If you have not, pick the weight you would be happy to defend for the rest of your life and be honest about it, because the method is exactly as good as that one figure. It does not have to be precise. It has to be honest, and the distance between those two words is the whole reliability of the thing.
That one number covers fat loss, maintenance and building. It does not climb when you start training harder and it does not fall when you start cutting. What moves is the fat, and the fat moves through the ratio.

The protein column is identical in all four rows. That is not laziness, it is the argument. Every other table you will find moves protein and leaves fat to sort itself out. This one holds protein and moves fat, because protein is a requirement and fat is a fuel, and you do not adjust a requirement to chase a goal.
This is also the number I hand a new client in their first week, unchanged, with nothing clever bolted onto it. No loading phase, no ramp, no fortnight of “let us see where you are first”. Work out the bodyweight they are aiming at, multiply, eat that. The temptation in coaching is to look busy by making the opening number complicated, and it buys nobody anything. If the rule is right it is right on day one.

Why you anchor to the weight you want, not the weight you are
Here is the question nobody in this field answers out loud. Why does a man at 120 kilos not need 120 kilos worth of protein?
Because protein is a requirement of tissue, not of mass. Muscle turns over constantly. It is broken down and rebuilt every day, and that rebuilding is what dietary protein pays for. Adipose tissue does not participate. It is a storage depot, overwhelmingly lipid by weight, and its demand for amino acids is a rounding error next to the muscle sitting underneath it.
So take two people with the same skeleton and the same muscle, one of them carrying twenty kilos more fat than the other. An actual-bodyweight rule gives them different protein targets. Nothing that eats protein is different between them. The rule has responded to the presence of a substance that has no opinion on the matter.
Follow that logic to where it ends and it gets worse. Under an actual-bodyweight rule, gaining fat raises your protein requirement. The fatter you get, the more protein you are instructed to eat, and on a fixed appetite that protein has to displace something. On this diet it displaces the fat, which is the fuel, which is the thing that was keeping you full and steady in the first place. The rule quietly makes the problem harder in exact proportion to how much of the problem you already have.
A target should not reward the thing you are trying to get rid of.
Anchor to ideal bodyweight instead and the number holds still. You set it once. Six months and fifteen kilos later it is the same number, which is correct, because the muscle you are defending through that fat loss is the same muscle. Protein is not a tax on your bodyweight. It is the maintenance bill for your lean tissue, and that bill does not change because you got lighter.
That stability is worth more than the accuracy people imagine they are giving up. A target that drifts every time the scale moves is a target you will stop trusting, and then stop hitting.
The obvious objection is that a bigger body has bigger requirements. It does. It has bigger energy requirements, and energy is fat’s department. Carrying extra weight up the stairs costs calories, not amino acids.
The sharper objection is that lean body mass would be the truest anchor, and that is fair. Lean mass is what the argument is really about. The problem is practical: using it means estimating your body fat percentage, which is the least reliable number in any gym. Calipers in untrained hands, scales that guess from a current up your leg, mirrors that flatter or punish by the hour. Ideal bodyweight gets you to the same place with a tape measure and a straight answer to yourself about what you would weigh lean.
That is also the method’s one genuine weakness, and it is worth naming rather than hiding. Set your ideal bodyweight to a fantasy and the target is a fantasy. Nobody has ever been harmed by choosing the honest figure.
I walk between ninety and ninety-seven kilos depending on what I am doing. Right now I am cutting and the scale says ninety-one. My protein has not moved through any of that, and that is not discipline, it is just what the rule does. The number was set against the body I intend to carry, and I have not changed my mind about what that is, so there has been nothing to recalculate. Ninety-one this morning, ninety-six in March, same protein both days. The fat is what moved, and it moved by a lot.
That is the whole practical case for the method, and it is a boring one. A target you set once is a target you still remember in week eleven.
What the 1.6 to 2.2 gram consensus gets right, and where it came from
It came from one paper, and it is a good one.
Morton and colleagues pooled 49 studies and 1,863 participants and ran a two-segment regression on protein intake against gains in fat-free mass. The line went up, then flattened. The breakpoint landed at 1.62 grams per kilo per day, and the ninety-five per cent confidence interval around it ran from 1.03 to 2.20. That interval is where the 2.2 came from. The range everybody quotes as settled is in fact a point estimate at one end and the outer edge of statistical uncertainty at the other.
It is softer still than that. The breakpoint itself did not reach significance, at p equals 0.079, and Stronger by Science have gone through the analysis in detail to make exactly that point. Their reading is that we cannot be confident there is a plateau at all, and that if one exists we are not confident where it sits. They lean towards the true figure being higher than 1.62 rather than lower, which is worth saying plainly, because a number does not become soft only in the directions that suit me.
So the honest position is that 1.6 to 2.2 is a defensible band drawn around a wobbly point, not a law.
Now convert mine. Zero point eight grams per pound is 1.76 grams per kilo. That figure sits inside the consensus band, closer to the middle than the bottom. For somebody already lean, the two rules produce nearly the same plate of food.
Which tells you the disagreement was never about protein. It is about what you multiply. Run both rules on a man at 120 kilos who would be 85 lean and the consensus asks for 192 to 264 grams a day while mine asks for 150. The gap is not a difference of opinion about muscle. It is 35 kilos of fat being handed a seat at the table.

I have been on both sides of that band across six years of this, through bulks and cuts and a stretch of eating considerably more protein than I needed because the internet was confident about it. What I can tell you from my own logbook is that the returns stop in both directions. Below the band the bar tells you almost immediately. Above it, nothing happens at all. No extra size, no faster recovery, nothing but a more expensive shop and less room on the plate for the fat that was actually fuelling the session.
That is not a criticism of the research. It is the same thing the research found, arrived at by a slower and more annoying method.
One more thing those trials were not testing. They measured supplements added on top of habitual intake in people eating carbohydrate, over eight to sixteen weeks. Nobody in them was fat-adapted, and nobody was eating animal protein as the structural basis of every meal. The other direction: why the official 0.75 grams is too low for anyone who lifts
The UK reference nutrient intake for protein is 0.75 grams per kilo of bodyweight a day. For a 75 kilo man that is 56 grams. It is not a mistake, and it is not a conspiracy. It is simply a different question being answered.
That figure was set from nitrogen balance work more than thirty years ago, and nitrogen balance measures one thing: whether you are losing tissue. It is the intake at which nearly everybody stops going backwards. It was never designed to answer what a person under load needs to hold muscle, recover from heavy sets, or keep lean mass through their sixties.
Preventing deficiency and supporting a body that gets asked to do things are two different projects, and only one of them has a barbell in it. Meeting the reference intake means you will not waste away. It says nothing about whether you will get anywhere.

What it looks like when you are under, and what it looks like when you are over
Both failure modes are real, and which one has you depends almost entirely on who you are.
The people already eating this way overwhelmingly come in too high. They have arrived at carnivore through a decade of being told protein is the virtuous macro, they have carried that instinct across intact, and now they are applying it to a diet where meat is the only thing on the plate. So they eat like they are still fighting for protein in a world of bread, and they end up well past where the returns stopped, with the fat squeezed out to make room for it. That is the mirror of what the old explorers found. Full, and somehow still not fed. If protein has crept past roughly a third of your calories while the fat stayed politely out of the way, the fix is not more meat, it is fattier meat, and the full account of what goes wrong up there is at what happens when protein climbs and fat does not.
The under-eaters are making a different mistake, and it almost always starts in the same place: choosing lean. Lean sounds like the responsible option, so the trolley fills with five per cent mince, chicken breast and trimmed steak, and the fat that was supposed to be doing the fuelling never turns up. That one decision fails in both directions at once. It strips the energy out of the plate, and because nobody wants to eat two kilos of anything, the protein target quietly goes unmet as well.
It hides for months, because this diet is unusually good at hiding it. On a normal diet, under-eating announces itself as constant grazing, so at least the person knows something is wrong. Here the food is satiating enough that the alarm never goes off. You are not ravenous. You are just slightly flat, slightly weak and slightly cold for a long time, with no single day bad enough to investigate.

It gets worse with age, because appetite fades faster than the requirement does. Cooking for one gets tedious. A chop with a bit of cheese starts to feel like enough of a dinner. It is not enough, and it is least enough exactly when it matters most, because the same shortfall costs more at sixty than it did at thirty.
What under looks like from the outside: hunger no meal settles, strength stalling and then sliding on the compounds, sessions that feel heavy for no reason, recovery stretching from two days to four, cold hands, thin hair, a mood that has quietly flattened. Almost all of it gets blamed on the diet. Almost none of it is the diet.
A man in his forties came to me convinced carnivore had stopped working. Flat by mid-morning, cold in an office nobody else found cold, losing sessions in the gym he used to finish without thinking about them. He was eating two meals a day of five per cent mince, dry pan, no butter, and he had never once felt like he was restricting. Totted up, he was on about fourteen hundred calories a day.
None of that was a willpower problem. It was a shopping problem. We moved him to twenty per cent beef, cooked in butter with the fat stirred back through instead of poured away, and put two eggs on top of the first meal. That was the whole intervention. No new rule, no schedule, no supplement. It took him to roughly twenty-six hundred calories. Within three weeks the mid-morning crash had gone, the gym numbers had come back, and he had lost four pounds while eating almost double what he had been eating before.
Notice what he was not short of. Fourteen hundred calories of five per cent mince is a plate that is very nearly all protein. He was over on protein as a share of what he ate and under on protein in absolute grams, at the same time, and the single decision that achieved both was buying the lean stuff.
The two errors need opposite corrections, which is why one piece of advice shouted at everybody does so little good. Telling the first group to eat more protein makes them worse. Telling the second group to watch their protein is close to negligent.
What the number looks like on a plate
Grams are abstract. Shopping is not.
The mince figures below are the ones from the case for full-fat mince, because that is the food most of this diet is actually built on, and because the fat-to-protein column is the reason 20% is the default rather than a compromise.

Read the last column and the pattern falls out on its own. Lamb shoulder, pork belly and twenty per cent mince arrive at the one to one floor by themselves, with no assembly required. Sirloin, braising steak and brisket do not; hit your protein with those alone and you land well under on fat, which is the shortfall nobody notices because the plate looked generous. That is not an argument against a steak. It is an argument for what goes on top of it.

Read down the mince column and the diet stops being theoretical. Somebody who would be 80 kilos lean needs about 830 grams of 20% mince a day to hit their protein. Somebody who would be 60 kilos lean needs about 620. Neither is an intimidating amount of food once the fat is doing the fuelling, which is exactly why the ratio and the protein figure have to be set together rather than one at a time.
Those are raw weights, and that matters more than it sounds. Meat loses roughly a quarter of its weight in the pan, most of it water, so 830 grams raw arrives on the plate as something closer to 600. Weigh your dinner after cooking, compare it against a raw table, and you will conclude you are eating plenty while running well under. It is the most common piece of accidental arithmetic in this whole subject, and it always errs in the same direction.
The other convenience is that at 20% the ratio solves itself. Hit your protein with standard mince and the fat lands on the 1:1 floor without you doing anything, because that is simply what the food is. Nobody has to weigh butter to make the sums work. That is the argument for the fattier grade in one sentence: it is the cut that hits both numbers by default.
In practice this is about a hundred pounds a week of meat for me, which is worth stating plainly because the cost question is usually asked in bad faith and rarely answered at all. It buys mince in five hundred gram packs and brisket in kilos, because those are the two sizes that actually get eaten rather than admired. A kilo of brisket is one cook and three days of food. Five hundred grams of mince is a dinner that needs no thought.
That is a real number from a real shop, not a modelled one, and it is worth holding next to what the same week of eating costs when half of it arrives as something with a health claim on the box.
Steak, eggs and whatever dairy you tolerate do the same job with more variety and less change from your wallet. What else belongs in the trolley, ranked rather than listed, is at the complete carnivore food list.
The people who need to be strictest about hitting it
The number does not go up for anybody. What changes is how much slack you have when you miss it, and for three groups the answer is none.
Older lifters first. Ageing muscle develops anabolic resistance, which means the same dose of protein produces a smaller building response than it did twenty years earlier. The dose is not the problem. The receiving end is. Drifting fifteen grams under matters far more at sixty than it did at thirty, because there is less margin absorbing the shortfall. The training side of that is at holding strength as you age.
Then women through the menopause transition, and this is not a footnote to the section above. Falling oestrogen accelerates the loss of lean mass and bone density at the same time, and it does it in exactly the years when most nutritional advice pointed at women is still quietly telling them to eat less of everything. The instruction and the biology are pulling in opposite directions, and the biology does not negotiate. So the protein holds, the fat holds, and the thing that has to change is the willingness to eat the whole amount without apologising for it. That is usually the harder part. Nobody arrives at fifty having been encouraged to eat a full plate. The wider picture is at carnivore for women and the training side at lifting for women.
Third, anyone returning after a layoff, whether the cause was an injury, a bad year or a job that ate the evenings. Rebuilding tissue you have already lost is more expensive than keeping tissue you still have, and the first month back is precisely when appetite has not caught up with the demand being placed on you. The sessions restart immediately. The hunger takes a few weeks to remember what it is for, and the gap between those two things is where people quietly under-eat their way through the hardest month.
A woman in her fifties came to me certain her metabolism was broken. She had been on and off diets since her twenties and had not moved for eight months on what she was confident was a proper carnivore approach. Chicken breast, lean steak, egg whites and skyr, every gram of it weighed. It came to around eleven hundred calories a day and about thirty grams of fat in total. Thirty grams is less fat than there is in a decent steak, and it was her entire day.
We put the yolks back. Ground beef and lamb shoulder instead of the breast and the loin, butter in the pan, double cream in the coffee, and the scales away entirely. She ate to appetite and it settled at around nineteen hundred calories.
The weight moved for the first time in eight months and her hands stopped being cold. But the thing she mentioned first, before either of those, was that she had stopped counting down the hours until her next meal. Thirty years of dieting had taught her that hunger was the price of progress. It took about a fortnight of eating properly to undo that, and she got the weight loss as well.
The three worries you can put down
Does protein turn to sugar and break ketosis?
No, not at this intake. Your liver does make glucose from protein, but the process is led by demand rather than supply. It manufactures roughly what the body has asked for. It does not open the taps because a steak arrived. At 0.8 grams per pound with fat carrying the energy, ketosis holds perfectly well, and the people who do knock themselves out of it are almost always eating lean and making the shortfall up somewhere else.
Will this hurt my kidneys?
No, not if your kidneys are healthy. A meta-analysis of 28 trials covering 1,358 people found that higher protein intakes did not adversely affect the change in kidney function in healthy adults. Filtration rate rises, which is the kidney doing its job rather than failing at it. Existing kidney disease is a separate conversation and belongs with your doctor.
Can I only use 30 grams of protein at a time?
No. That figure comes from studies measuring the muscle-building response over a few hours after a single dose, which is a question about a measurement window rather than a question about your day. Protein eaten beyond that point is still digested, still absorbed and still available to the body. Amino acids do not expire at the thirty gram mark. Hit the daily number and let your appetite arrange the rest of it.
What to do this week
Work out your ideal bodyweight honestly, multiply it by 0.8 if you think in pounds or 1.76 if you think in kilos, and eat that much protein every day for seven days without changing anything else. Not the training, not the fat, not the timing. One number, one week. Most people have never actually done it, which is why most people are still guessing.
People running the sixteen week programme ask me whether the protein moves between the blocks, and it does not. Same number in week one as in week sixteen, through the heavy work and the back-off weeks alike. The training moves. The fat moves with the goal. Protein sits where it was set on the first day, because the tissue it is feeding did not change just because the programme did.
