The Carnivore Smash Burger

Ingredients
  

  • 500 grams 20% Ground Beef formed into 4 loose balls, not compacted
  • 4 slices Cheese cheddar or American-style
  • 1 tsp Salt
  • 1 tbsp Tallow or Butter optional, for the pan
  • 2 Eggs optional, or a bacon lattice, to use as a bun

Instructions
 

  • Divide the mince into four loose balls and do not compact them. Get a cast-iron pan or steel plate ripping hot over your highest heat.
  • Put a ball on the dry hot surface and smash it flat with a sturdy spatula, pressing hard for a full thirty seconds so the edges spread and lace. Do this once and never press again.
  • Salt the top. Cook without touching it until the edges are deep brown and the top is beading with juice, about two minutes.
  • Flip once, lay a slice of cheese on each patty, and cook for another thirty to sixty seconds until the underside has a hard crust and the cheese melts. Cover for the last fifteen seconds if you want it fully molten.
  • Stack two patties per burger. Serve on a fried egg or a bacon lattice if you want a bun, or straight off the plate with a knife and fork.
